Greek Fajitas!

Levi loves to experiment with different flavors. This one was a huge hit in our house. Give it a try!

Greek Fajitas

2 pounds boneless/skinless chicken breast, cut in strips

3 large bell peppers, cut in strips

1 large onion, sliced

Greek seasoning to taste (I used Cavenders)

Cooking oil (I used grapeseed)

6 pitas

Tzatziki sauce

Feta cheese

Mediterranean Pico

½ red onion, finely diced

½ English cucumber, finely diced

2 Roma tomatoes, diced

½ lemon, juice only

3 cloves of garlic, finely minced

  1. Prepare the peppers, onions and chicken. Sprinkle the chicken with the Greek seasoning. 

  2. To make the pico, add all of the ingredients to a medium bowl and give it a light toss. Allow the flavors to marry together while you cook the chicken and veggies. 

  3. In a large skillet, add 2 tablespoons of oil and bring to medium/high heat. Add the seasoned chicken and cook for 4-5 minutes until the chicken is mostly cooked. Then add the peppers and toss with the chicken, cooking for about 2 minutes. Lastly add the onions and toss with the peppers and chicken about 2 minutes more. Serve hot and from a sizzling pan to look cool. 

  4. Serving; spread tzatziki on ½ of the pita, add some feta cheese and chicken and veggies. Top with the pico and enjoy.

  5. To spice it up, I would recommend adding either some pickled hot peppers or freshly sliced hot peppers. I am partial to Jalapeños.
